- Juice and zest of one lemon
- 1 (19 fluid ounce) can chickpeas, drained
- 2 heaping tablespoons tahini
- 2-3 cloves garlic
- 1/2 teaspoon ground cumin
- 1/3 cup olive oil
- Water, as needed
- Salt and pepper, to taste
Instructions
- Combine Ingredients: Add the lemon juice and zest, drained chickpeas, tahini, garlic cloves, ground cumin, salt, and pepper into a food processor. Do not add the olive oil yet.
- Blend and Add Oil: Start blending the mixture on high speed. While blending, slowly drizzle in the olive oil for about a minute until the hummus becomes smooth. Stop occasionally to scrape the sides down and continue blending until fully combined and creamy.
- Adjust Consistency and Serve: If the hummus is too thick or dry, gradually add water, starting with about 1/4 cup, while blending until you reach your desired consistency. Serve the hummus immediately or chill it before serving. For an extra touch, drizzle with olive oil and sprinkle with smoked paprika.

- If using fresh garlic, adjust the quantity to taste as raw garlic can be intense.
