Description

A refreshing and vibrant summer salad that combines juicy watermelon, sweet blueberries, fragrant mint, and tangy feta cheese, lightly sweetened with honey. Perfect as a light appetizer or side dish to brighten up any meal.

Ingredients

Scale

Fruit

  • 4 cups watermelon, balled (about half a large watermelon)
  • 3 cups blueberries

Herbs and Sweetener

  • 1/4 cup mint, finely chopped
  • 2 tablespoons honey

Cheese

  • 4 ounces feta, crumbled

Instructions

  1. Prepare the fruit mixture: In a large bowl, combine the watermelon balls, blueberries, finely chopped mint, and honey. Stir gently to evenly coat the fruit with honey and mix the flavors together.
  2. Marinate the fruit: Place the bowl in the refrigerator and let the fruit mixture marinate for 20 to 30 minutes. This resting time allows the flavors to meld and the fruit to become slightly infused with the mint and honey.
  3. Add the feta and serve: After marinating, add the crumbled feta cheese to the fruit mixture. Stir gently to incorporate the feta without breaking it up too much. Serve immediately for the freshest taste.

Notes

  • For best flavor, use ripe, fresh watermelon and blueberries.
  • Can be prepared a few hours ahead but add feta just before serving to keep its texture.
  • Mint can be substituted with fresh basil for a different herbal note.
  • Honey can be adjusted or omitted for less sweetness.
  • Optional: Add a squeeze of lime juice for extra brightness.
