- 1 medium cucumber, grated and strained
- 1–2 garlic cloves, finely minced or grated
- 1 tablespoon extra virgin olive oil

- 1 tablespoon chopped fresh dill (or mint)
- Salt, to taste
- Optional: black pepper or pinch of cayenne

- Prepare the cucumber: Grate the cucumber using the large holes on a box grater. Then, squeeze out the excess moisture using a cheesecloth or a clean towel to prevent the sauce from becoming watery.
- Mix the ingredients: In a bowl, combine the Greek yogurt, drained grated cucumber, finely minced or grated garlic, extra virgin olive oil, fresh lemon juice (or white wine vinegar), and chopped fresh dill. Stir the mixture thoroughly until well blended.
- Season the sauce: Add salt to taste. Mix again thoroughly, then adjust the lemon juice or garlic as needed to balance the flavors according to your preference.
- Chill and develop flavors: Cover the bowl and refrigerate the sauce for at least 30 minutes. This resting time allows the flavors to meld and intensify for a more delicious result.
