Instructions

  1. Make the Tomato Jam: In a saucepan over medium heat, combine the halved cherry tomatoes, sugar, apple cider vinegar, salt, black pepper, and red pepper flakes. Cook the mixture, stirring occasionally, until it thickens to a jam-like consistency, approximately 20 to 25 minutes. Once thickened, remove it from the heat and let it cool slightly.
  2. Toast the Baguette: While the tomato jam cooks, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush each lightly with olive oil. Place them in the oven and toast for 6 to 8 minutes or until the edges are golden brown.
  3. Prepare the Bread: Immediately after toasting, while the slices are still warm, rub each slice with the peeled garlic clove to impart a subtle garlic flavor.
  4. Assemble the Bruschetta: If using, spread a thin layer of goat cheese or cream cheese on each toasted baguette slice. Spoon a generous amount of the tomato jam over the cheese or directly onto the bread if omitting cheese.
