  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit to ensure it reaches the ideal temperature for crispy fries.
  2. Prepare Potatoes: Cut the ends off the peeled russet potatoes, then slice them into matchstick shapes, ensuring uniform size for even cooking.
  3. Toss with Seasoning: In a large bowl, toss the cut potatoes with canola oil, half of the shichimi togarashi seasoning, and the kosher salt to evenly coat each fry with flavor and oil.
