Ingredients
Scale
Meat and Seasoning
- 1 pound ground beef
- 1 packet taco seasoning
Rice and Liquid
- 2 cups water
- 2 cups Minute Rice, uncooked
Toppings
- 1 cup salsa
- 1 cup shredded cheddar cheese
Instructions
- Brown the Beef: In a large skillet over medium heat, brown and crumble 1 pound of ground beef until fully cooked. Drain any excess grease to keep the dish from becoming too oily.
- Add Seasoning and Water: Stir in 1 packet of taco seasoning and 2 cups of water. Mix well and bring the mixture to a boil to integrate the flavors and cook the seasoning.
- Add Rice: Reduce the heat to low, then add 2 cups of uncooked Minute Rice to the skillet. Stir thoroughly to combine with the beef mixture.
- Cook Rice: Cover the skillet with a lid and let the rice cook for about 5 minutes or until it has absorbed the water and become tender.
- Finish with Salsa and Cheese: Remove the lid and gently stir in 1 cup of salsa and 1 cup of shredded cheddar cheese. Allow the cheese to melt into the rice and beef mixture.
- Serve: Turn off the heat and serve the taco rice hot for a delicious meal.
Notes
- You can customize this dish by adding diced onions, bell peppers, or jalapeños while browning the beef for extra flavor and texture.
- Use low-sodium taco seasoning to reduce sodium content if desired.
- For a vegetarian version, substitute ground beef with plant-based crumbles and use vegetable broth instead of water.
- Minute Rice absorbs liquid quickly; avoid overcooking to prevent mushiness.
- Garnish with fresh cilantro, sour cream, or avocado slices for extra appeal.
