Ingredients
Scale
Chicken and Cooking
- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
Peanut Sauce
- 1 cup (240ml) creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
Wrap Assembly
- 4 large whole wheat tortillas
- 1 cup shredded carrots
- 1 cup thinly sliced red bell pepper
- 1 cup chopped cucumber
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped roasted peanuts
Instructions
- Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the thinly sliced chicken breasts and cook for about 6-8 minutes, stirring occasionally until the chicken is thoroughly cooked and golden brown. Remove from heat and set aside.
- Prepare the Peanut Sauce: In a medium bowl, whisk together creamy peanut butter, soy sauce, rice vinegar, honey, lime juice, grated ginger, minced garlic, and red pepper flakes until smooth and creamy.
- Spread Sauce on Tortillas: Lay out each whole wheat tortilla and spread a generous amount of the prepared peanut sauce evenly over the surface of each one.
- Add Chicken: Evenly divide the cooked chicken slices among the tortillas, placing the chicken down the center of each wrap.
- Add Fresh Vegetables: Top the chicken with shredded carrots, thinly sliced red bell pepper, chopped cucumber, and fresh cilantro to add crunch and freshness.
- Sprinkle Peanuts: Sprinkle chopped roasted peanuts on top of the vegetables to add extra texture and flavor.
- Roll the Wraps: Tightly roll up each tortilla, folding in the sides as you go to encase all the fillings securely.
- Serve: Slice each wrap diagonally in half and serve immediately for a fresh, flavorful meal.
Notes
- Use natural peanut butter without added sugars for a healthier option.
- Adjust red pepper flakes to taste for desired spiciness.
- Substitute chicken breasts with tofu or tempeh for a vegetarian version.
- Wraps can be prepared ahead but assemble just before serving to retain freshness.
- Whole wheat tortillas add extra fiber, but feel free to use gluten-free wraps if needed.
