- 2/3 cup water
Assembly:
- 8 small flour tortillas (soft taco size)
- 1 1/2 cups shredded cheddar jack cheese
- 1/2 cup pico de gallo or finely chopped fresh salsa
- Optional: sour cream or hot sauce for serving
Instructions
- Cook the Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked, about 6–8 minutes. Drain excess grease.
- Season the Beef: Add taco seasoning and water, then simmer for 3–4 minutes until thickened.
- Prepare Tortillas: Warm the tortillas until soft and pliable.
- Assemble Meximelts: Place seasoned beef, cheese, and pico de gallo down the center of each tortilla. Fold and roll tightly.
- Melt the Cheese: Wrap Meximelts in foil or parchment, then microwave for 20–30 seconds to melt the cheese.
- Serve: Enjoy warm Meximelts with sour cream or hot sauce if desired.
