Crust
- 1½ cups graham cracker crumbs

- 16 oz cream cheese, softened
- ½ cup powdered sugar

- 1 cup heavy whipping cream
Toppings
- 1 cup fresh raspberries
- 2 medium ripe peaches, peeled and sliced
- 2 tablespoons peach preserves or jam (optional, for glaze)
Instructions
- Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan or pie dish to form the crust. Place the crust in the refrigerator to chill and set while you prepare the filling.
- Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to beat until fully incorporated.
- Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, taking care to preserve the fluffiness and achieve a smooth, airy filling.
- Assemble the cheesecake: Spread the cheesecake filling evenly over the chilled crust, smoothing the top with a spatula.
- Add the fruit topping: Arrange the sliced peaches and fresh raspberries decoratively on top of the cheesecake filling. For a glossy finish, warm the peach preserves slightly and brush it gently over the fruit.
- Chill to set: Refrigerate the assembled cheesecake for at least 4 hours, or preferably overnight, to allow it to fully set and the flavors to meld before serving.
Notes
- You can use canned peaches if fresh ones are out of season; just be sure to pat them dry before using.
- Substitute strawberries or blueberries for raspberries for a different fruit variation.
