Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Mix the Fruit Filling: In a large bowl, combine the sliced peaches and strawberries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until all fruit pieces are evenly coated to help thicken the filling as it bakes.
  3. Assemble the Fruit Layer: Pour the mixed fruit evenly into the prepared baking dish, spreading it out to create a uniform layer.
  4. Prepare the Crisp Topping: In a separate bowl, mix the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs.
