Description

This Spinach Feta Quiche is a delightful savory pie featuring a flaky homemade crust filled with a creamy mixture of fresh spinach, tangy feta, and mozzarella cheeses. Perfect for breakfast, brunch, or a light lunch, this quiche offers a balance of rich flavors and wholesome ingredients baked to golden perfection.

Ingredients

Scale

For the Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter, cold and cut into pieces
  • 1/4 cup cold water
  • 1/4 tsp salt

For the Filling

  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large eggs
  • 1 cup milk
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the crust: In a food processor, pulse the all-purpose flour, cold butter, and salt until the mixture resembles coarse crumbs. Gradually add the cold water, pulsing until the dough starts to come together. Press the dough evenly into a pie dish and refrigerate while preparing the filling.
  2. Preheat the oven: Set your oven to 375°F (190°C) to warm up for baking the quiche.
  3. Make the filling: In a medium bowl, whisk together the eggs and milk until combined. Stir in the chopped fresh spinach, crumbled feta cheese, shredded mozzarella cheese, dried oregano, dried basil, and season with salt and pepper according to your taste.
  4. Assemble and bake: Pour the prepared filling into the chilled pie crust. Place the quiche in the preheated oven and bake for 35 to 40 minutes, or until the filling is set and the top turns a light golden color.
  5. Cool and serve: Remove the quiche from the oven and allow it to cool for several minutes before slicing. Serve warm or at room temperature for the best flavor and texture.

Notes

  • For a flakier crust, avoid over-processing the dough to maintain small butter pieces.
  • You can substitute milk with half-and-half or cream for a richer quiche.
  • Fresh spinach can be lightly sautéed and drained before adding if you prefer a less watery filling.
  • This quiche can be refrigerated for up to 3 days and reheated gently in the oven.
  • Feel free to add herbs like thyme or chives to customize the flavor.
