Ingredients
Scale
Bread
- 2 slices of whole grain or sourdough bread (or sandwich rolls)
Spread
- 2 tablespoons cream cheese (or vegan cream cheese for dairy-free option)
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- Salt and pepper, to taste
Filling
- 4 oz smoked salmon
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1 small tomato, sliced
- 1 tablespoon capers (optional)
- Fresh lettuce (such as arugula or mixed greens)
Instructions
- Prepare the dill cream cheese spread: In a small bowl, combine the cream cheese, fresh dill, and lemon juice. Stir until smooth and well-mixed. Season with a pinch of salt and pepper to taste.
- Toast the bread: Toast the slices of bread or sandwich rolls until they are lightly golden and crispy. You can do this in a toaster, on a grill pan, or in the oven.
- Assemble the sandwich: Spread a generous layer of the dill cream cheese on one side of each slice of toasted bread.
- Add the smoked salmon: On one slice of bread, layer the smoked salmon evenly.
- Add fresh vegetables: Add the thinly sliced cucumber, red onion, and tomato on top of the smoked salmon.
- Add capers and lettuce: Sprinkle capers on top if using, and add a handful of fresh lettuce or arugula.
- Finish the sandwich: Place the second slice of bread on top to complete the sandwich.
- Serve: Slice the sandwich in half and serve immediately with a side of chips, pickles, or a salad.
Notes
- You can substitute the cream cheese with a vegan cream cheese to make this sandwich dairy-free.
- Use fresh dill for best flavor, but dried dill can be used as an alternative.
- Adding capers is optional but adds a nice briny touch that complements the smoked salmon.
- Toast the bread to your preferred level of crispness to add texture to the sandwich.
- Serve immediately to enjoy the crispness of the bread and freshness of the vegetables.
