Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef or ground turkey
- 1 small onion, diced
- 3 bell peppers (any color), diced
- 3 cloves garlic, minced
Tomato Base
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 tablespoon tomato paste
Seasonings
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Liquids and Rice
- 4 cups beef or vegetable broth
- 3/4 cup uncooked white or brown rice
Garnish
- Chopped parsley (optional)
Instructions
- Cook the meat and onions: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked through. Drain off any excess fat to keep the soup lighter.
- Combine ingredients in slow cooker: Transfer the cooked meat and onions into your slow cooker. Add the diced bell peppers, minced garlic, diced tomatoes, tomato sauce, tomato paste, Italian seasoning, smoked paprika if using, salt, pepper, broth, and uncooked rice. Stir thoroughly to combine all ingredients evenly.
- Slow cook the soup: Cover the slow cooker with the lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. This ensures the rice becomes tender and the flavors meld together perfectly.
- Final touch and serving: Before serving, stir the soup to ensure everything is mixed well. Taste and adjust seasonings if needed. Ladle the soup into bowls and garnish with chopped parsley if desired for a fresh touch.
Notes
- If you prefer firmer rice texture, cook the rice separately and add it to the soup just before serving.
- This soup freezes well; cool completely before storing in freezer-safe containers for up to 3 months.
- For extra comfort, top with a sprinkle of shredded cheese just before serving.
