Description

For the Marinade:

  • 1 ½ pounds flank steak or skirt steak, thinly sliced against the grain
  • 3 tablespoons olive oil, divided
  • 3 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Fajitas:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • Warm flour tortillas
  • Sour cream
  • Salsa
  • Guacamole
  • Chopped cilantro for serving

Instructions

  1. Marinate the Steak: In a large bowl or zip-top bag, combine 2 tablespoons olive oil, lime juice, soy sauce, chili powder, cumin, paprika, garlic powder, salt, and pepper. Add the steak slices and toss to coat. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Cook the Steak: Heat the remaining tablespoon of olive oil in a large cast iron skillet over medium-high heat. Add the marinated steak and sear for 4–5 minutes, stirring occasionally, until browned and cooked to desired doneness. Transfer the steak to a plate and cover loosely with foil.
  3. Cook the Veggies: In the same skillet, add the sliced bell peppers and onion. Cook for 5–6 minutes until softened and slightly charred. Return the steak to the skillet and toss with the vegetables until heated through.
  4. Serve: Serve the sizzling steak and veggies immediately with warm tortillas and your favorite toppings like sour cream, salsa, guacamole, and cilantro.

Notes

  • For a smoky twist, grill the steak instead of pan-searing.
  • You can also substitute chicken or shrimp with the same marinade.
