Bread and Vegetables
- 6 soft fresh bread rolls
- 1 small head of green lettuce
- 2 medium tomatoes, thickly sliced
- 2 avocados, pitted, peeled and sliced (optional)
- 1 small cucumber, diced
- 8-10 fresh basil leaves for garnish (optional)
Shrimp Mixture
- 1 lb large shrimp, cooked, shelled and coarsely chopped
- 1/4 cup real mayonnaise
- 2 Tbsp sour cream
- 2 tsp Dijon mustard (Grey Poupon)
- 1 tsp lemon juice
- 1 Tbsp fresh dill, finely chopped
- 2 Tbsp fresh green onion, finely chopped
Instructions
- Prepare the shrimp mixture: In a bowl, combine the coarsely chopped cooked shrimp with mayonnaise, sour cream, Dijon mustard, lemon juice, fresh dill, and green onion. Mix well until all ingredients are evenly incorporated to create a creamy, flavorful filling.
- Prep the vegetables: Wash and dry the green lettuce leaves. Slice the tomatoes thickly and dice the cucumber. If using, pit, peel, and slice the avocados. Set all aside for assembly.
- Assemble the sandwiches: Slice the bread rolls horizontally without cutting all the way through. Layer the bottom halves with lettuce leaves, followed by slices of tomato, cucumber, and avocado if using. Spoon a generous portion of the shrimp mixture over the vegetables.
- Garnish and finish: Add fresh basil leaves if desired for garnish. Close the sandwiches with the top halves of the rolls. Serve immediately to enjoy the freshness and texture.
Notes
- For best flavor, use fresh, high-quality cooked shrimp.
- Avocado is optional but adds a creamy texture that complements the shrimp.
- These sandwiches are best served fresh to keep the bread from becoming soggy.
- You can substitute Greek yogurt for sour cream to lighten the dressing.
- If desired, add a pinch of salt and pepper to the shrimp mixture for extra seasoning.
