Bread and Vegetables

  • 6 soft fresh bread rolls

Shrimp Mixture

  • 1 lb large shrimp, cooked, shelled and coarsely chopped
  • 1/4 cup real mayonnaise
  • 2 Tbsp sour cream
  • 2 tsp Dijon mustard (Grey Poupon)
  • 1 tsp lemon juice
  • 1 Tbsp fresh dill, finely chopped
  • 2 Tbsp fresh green onion, finely chopped


Instructions

  1. Prepare the shrimp mixture: In a bowl, combine the coarsely chopped cooked shrimp with mayonnaise, sour cream, Dijon mustard, lemon juice, fresh dill, and green onion. Mix well until all ingredients are evenly incorporated to create a creamy, flavorful filling.
  2. Prep the vegetables: Wash and dry the green lettuce leaves. Slice the tomatoes thickly and dice the cucumber. If using, pit, peel, and slice the avocados. Set all aside for assembly.
  3. Assemble the sandwiches: Slice the bread rolls horizontally without cutting all the way through. Layer the bottom halves with lettuce leaves, followed by slices of tomato, cucumber, and avocado if using. Spoon a generous portion of the shrimp mixture over the vegetables.
