- Whisk the eggs: In a medium bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined. Set this aside while you prepare the shrimp.
- Cook the shrimp: Heat the vegetable oil in a large skillet or wok over medium heat. Add the peeled and deveined shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set them aside to avoid overcooking.
- Cook the garlic: Using the same pan, add the minced garlic and sauté for about 30 seconds or until fragrant, making sure not to burn it.
- Scramble the eggs: Pour the egg mixture into the pan with the garlic. Cook over medium heat, stirring occasionally, until the eggs are mostly set but still slightly soft to keep them fluffy and tender.
- Combine shrimp and eggs: Return the cooked shrimp back into the pan with the eggs. Stir gently to combine everything evenly and warm the shrimp through for about a minute.
- Garnish and serve: Sprinkle the thinly sliced green onions over the stir-fry for extra freshness and serve immediately while hot.
