Description

Delight your taste buds with this exquisite recipe for Scallops with Orange, Basil, and Caper Dressing. Tender sea scallops are seared to perfection and topped with a vibrant citrus-infused dressing that enhances their natural sweetness.

Ingredients

Sea Scallops:

1 pound sea scallops (patted dry),

For Seared Scallops:

1 tablespoon olive oil, salt and black pepper to taste,

Orange Basil Caper Dressing:

1 orange (zested and juiced), 2 tablespoons capers (drained), 2 tablespoons chopped fresh basil, 1 teaspoon Dijon mustard, 2 tablespoons extra virgin olive oil (for dressing), 1 teaspoon honey (optional)

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the orange juice, orange zest, capers, chopped basil, Dijon mustard, extra virgin olive oil, and honey (if using). Set the dressing aside.
  2. Sear the Scallops: Season the scallops with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for 2–3 minutes per side, or until golden brown and just cooked through. Remove from heat and plate immediately.
  3. Finish and Serve: Spoon the orange, basil, and caper dressing over the scallops. Serve warm, optionally garnished with extra fresh basil or orange zest.

Notes

  • Do not overcrowd the skillet—sear scallops in batches if needed to maintain a golden crust.
  • Pair with couscous, risotto, or a light salad for a balanced meal.
