Ingredients
Sea Scallops:

1 orange (zested and juiced), 2 tablespoons capers (drained), 2 tablespoons chopped fresh basil, 1 teaspoon Dijon mustard, 2 tablespoons extra virgin olive oil (for dressing), 1 teaspoon honey (optional)
Instructions
- Prepare the Dressing: In a small bowl, whisk together the orange juice, orange zest, capers, chopped basil, Dijon mustard, extra virgin olive oil, and honey (if using). Set the dressing aside.
- Sear the Scallops: Season the scallops with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for 2–3 minutes per side, or until golden brown and just cooked through. Remove from heat and plate immediately.
