  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced

  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika

Instructions

  1. Heat the olive oil: In a large skillet over medium-high heat, heat the olive oil.

  3. Sauté onions and peppers: In the same skillet, add the onion and bell peppers. Cook for 6–8 minutes until softened and slightly caramelized. Add the garlic and cook for 1 more minute.
  4. Combine ingredients: Return the sausage to the skillet. Stir in the diced tomatoes, Italian seasoning, smoked paprika, salt, and pepper.
  5. Simmer: Let the mixture simmer for 10 minutes to allow flavors to blend and sauce to reduce slightly.
  6. Serve: Serve the mixture hot over cooked rice. Garnish with chopped parsley if desired.
