Ingredients
Scale
Ingredients:
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced into ¼-inch rounds
- 1 large yellow onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, with juices
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 3 cups cooked white or brown rice
- Chopped fresh parsley, optional, for garnish
Instructions
- Heat the olive oil: In a large skillet over medium-high heat, heat the olive oil.
- Cook the sausage: Add the sliced sausage to the skillet and cook until browned, about 5–6 minutes. Remove the sausage and set aside.
- Sauté onions and peppers: In the same skillet, add the onion and bell peppers. Cook for 6–8 minutes until softened and slightly caramelized. Add the garlic and cook for 1 more minute.
- Combine ingredients: Return the sausage to the skillet. Stir in the diced tomatoes, Italian seasoning, smoked paprika, salt, and pepper.
- Simmer: Let the mixture simmer for 10 minutes to allow flavors to blend and sauce to reduce slightly.
- Serve: Serve the mixture hot over cooked rice. Garnish with chopped parsley if desired.
Notes
- For extra heat, consider adding red pepper flakes or using spicy sausage.
- You can opt for turkey or chicken sausage for a lighter version of the dish.
- This recipe pairs well with cauliflower rice for a low-carb alternative.
