Description

These Sausage, Egg, and Cheese Breakfast Roll-Ups are a delicious and convenient morning treat. Featuring savory sausage links, fluffy scrambled eggs, and melted cheddar cheese wrapped in flaky crescent roll dough, they bake up golden and perfect for a hearty breakfast or brunch. Ready in under 30 minutes, they’re great for feeding a crowd or enjoying as a grab-and-go meal.

Ingredients

Scale

Egg Mixture

  • 5 eggs
  • Salt and pepper to taste

Dough and Fillings

  • 1 can (8 oz) Pillsburyâ„¢ refrigerated crescent dinner rolls
  • 8 sausage links
  • 4 slices Cheddar cheese

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) to ensure it reaches the right temperature for baking the roll-ups evenly.
  2. Prepare Eggs: In a small bowl, beat all 5 eggs and then reserve 2 tablespoons of this mixture for brushing on the crescent rolls later.
  3. Scramble Eggs: Use the remaining beaten eggs to scramble them gently in a pan until fully cooked but still moist.
  4. Prepare Dough: Unroll the crescent dough onto a clean work surface and separate it into 8 individual triangular pieces.
  5. Add Cheese: Cut each slice of cheddar cheese in half and place one half slice onto each triangle of dough.
  6. Assemble Roll-Ups: Spoon a portion of the scrambled eggs on top of the cheese on each triangle, then place one sausage link over the eggs.
  7. Roll and Place: Loosely roll up each triangle starting from the wide end, enclosing the filling, and place the roll-ups seam side down on an ungreased cookie sheet.
  8. Brush with Egg Wash: Brush the tops of each roll-up with the 2 tablespoons of reserved beaten eggs to help achieve a golden, shiny crust. Sprinkle with salt and pepper to taste.
  9. Bake: Bake in the preheated oven for 15 to 18 minutes or until the roll-ups are puffed up and golden brown.

Notes

  • You can substitute sausage links with cooked bacon or ham if preferred.
  • For a spicier kick, add a sprinkle of red pepper flakes or a dash of hot sauce to the scrambled eggs.
  • These roll-ups are best served warm but can be stored in the refrigerator and reheated in the oven.
  • Feel free to experiment with different cheese varieties like mozzarella or pepper jack.
