Ingredients
Scale
Vegetables
- 4 medium zucchinis, sliced into 1/4-inch thick rounds
Seasonings & Oils
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Optional
- 1 tablespoon freshly grated Parmesan cheese
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the zucchini evenly and beautifully browned.
- Prepare Zucchini: In a large bowl, toss your sliced zucchini with olive oil, minced garlic, dried oregano, salt, and pepper until all slices are thoroughly coated with the flavorful mixture.
- Arrange on Baking Sheet: Lay the zucchini slices in a single layer on a baking sheet lined with parchment paper to ensure easy removal and even roasting.
- Roast: Place the baking sheet in the preheated oven and roast the zucchini for 15-20 minutes, turning them halfway through cooking. The zucchini should become tender and develop a light golden-brown color.
- Add Parmesan and Serve: Remove the zucchini from the oven. If desired, sprinkle freshly grated Parmesan cheese over the warm zucchini slices just before serving to add a savory, cheesy finish.
Notes
- For a crispier texture, slice zucchinis thinner than 1/4 inch.
- Try adding a sprinkle of red pepper flakes for a spicy kick.
- Parmesan cheese is optional but adds a nice depth of flavor.
- Perfect side dish to grilled meats or pasta dishes.
- Store leftovers in an airtight container and refrigerate for up to 3 days.
