- Cook the Potatoes: While the garlic is roasting, place the peeled and cut potatoes into a large pot. Cover them with cold water and add a generous pinch of salt. Bring the water to a boil over high heat, then reduce to medium and cook the potatoes for 15–20 minutes or until they are fork-tender.
- Drain and Prepare Potatoes: Drain the cooked potatoes thoroughly and return them to the pot. This helps evaporate any excess moisture, ensuring a fluffy texture when mashed.
