Instructions

  1. Soak the chia seeds: Measure 2 tablespoons of chia seeds and place them in a small bowl or jar. Pour 1 cup of water over the chia seeds and stir gently to combine. Set aside for 10-15 minutes until the chia seeds swell and form a gel-like texture.
  2. Prepare the lemon juice: Juice a fresh lemon to yield 2-3 tablespoons of fresh lemon juice.
  3. Combine ingredients: In a pitcher, add 2 cups of water along with the fresh lemon juice. Add the hydrated chia seeds to the pitcher.
  4. Add optional sweetener and mint: If desired, add 1-2 teaspoons of honey or maple syrup as a sweetener, and gently muddle a handful of mint leaves for extra flavor. Add these to the pitcher.
