Instructions
- Soak the chia seeds: Measure 2 tablespoons of chia seeds and place them in a small bowl or jar. Pour 1 cup of water over the chia seeds and stir gently to combine. Set aside for 10-15 minutes until the chia seeds swell and form a gel-like texture.
- Prepare the lemon juice: Juice a fresh lemon to yield 2-3 tablespoons of fresh lemon juice.
- Combine ingredients: In a pitcher, add 2 cups of water along with the fresh lemon juice. Add the hydrated chia seeds to the pitcher.
- Add optional sweetener and mint: If desired, add 1-2 teaspoons of honey or maple syrup as a sweetener, and gently muddle a handful of mint leaves for extra flavor. Add these to the pitcher.
- Mix and rest: Stir the entire mixture thoroughly to combine all ingredients and allow the flavors to meld for about 5 minutes.
- Serve: Pour the chia seed water into glasses filled with ice. Garnish with fresh mint leaves or lemon slices as desired and enjoy immediately.
