Instructions

  1. Boil Potatoes and Green Beans: Place the halved baby potatoes in a medium pot and cover them with cold, salted water. Bring to a boil and cook for 8–10 minutes, or until the potatoes are just tender. In the last 2 minutes of boiling, add the trimmed green beans to the same pot to cook together. Drain and set aside.
  2. Sauté Onions and Garlic: Heat olive oil in a large skillet over medium heat. Add the thinly sliced red onion and sauté for 2–3 minutes until softened and slightly translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Cook Potatoes and Green Beans: Add the cooked potatoes and green beans to the skillet with the onions and garlic. Sprinkle in the dried thyme, smoked paprika, salt, and black pepper. Stir well to coat everything evenly with the seasonings.
  4. Brown and Crisp: Continue to cook the mixture, stirring occasionally, for 5–7 minutes until the potatoes develop a golden and slightly crispy exterior.
  5. Finish and Garnish: Drizzle the skillet contents with lemon juice and toss well to combine all flavors. Remove from heat and garnish with chopped fresh parsley if desired before serving.
