Description

This classic Philadelphia Cheesecake recipe features a creamy and smooth cream cheese filling on a buttery graham cracker crust. Perfectly baked to a light golden top with a slightly jiggly center that sets beautifully after chilling. Ideal for special occasions or a delightful dessert anytime.

Ingredients

Scale

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling

  • 3 (8 oz) packages Philadelphia cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (163°C).
  2. Mix the Crust Ingredients: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are well-coated and the mixture is evenly combined.
  3. Form and Bake the Crust: Press the mixture into the bottom of a 9-inch springform pan to form a compact, even crust. Bake for 8-10 minutes until slightly golden and set. Remove and cool.
  4. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Add sugar and vanilla extract and beat until fully combined.
  5. Add Eggs and Creams: Add eggs one at a time, beating well after each. Then stir in sour cream and heavy cream until smooth and well combined.
  6. Assemble and Bake Cheesecake: Pour filling over cooled crust, spreading evenly. Bake for 55-60 minutes or until center is set but slightly jiggly and top is lightly golden.
  7. Cool in Oven: Turn off oven and cool cheesecake inside with door slightly open for 1 hour to prevent cracking.
  8. Cool Completely: Remove from oven and let cool fully at room temperature.
  9. Chill: Cover and refrigerate for at least 4 hours or overnight for best texture and flavor.
  10. Serve: Optionally top with fresh berries, fruit compote, or whipped cream before slicing.
  11. Slice and Enjoy: Cut into 12 servings and serve chilled.

Notes

  • Ensure cream cheese is softened to room temperature for a smooth filling.
  • Do not overbeat to prevent excess air bubbles that cause cracks.
  • Cooling in the oven with the door ajar helps minimize cracks on the cheesecake surface.
  • For best results, chill overnight to allow flavors to develop and texture to set perfectly.
  • You can add toppings like berry sauce or chocolate ganache for variation.
