Ingredients
Scale
Crust
- 24 Oreo cookies
- 3 tablespoons melted butter
Filling
- 2 cups vanilla ice cream, softened
Ganache
- 1 cup heavy cream
- 1 cup chocolate, chopped
Topping
- Whipped cream, for topping
- Chocolate shavings or sprinkles, for garnish
Instructions
- Prepare the crust: Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin. Mix the crumbs with melted butter until well combined to form a crumbly mixture.
- Form the crust base: Press the Oreo crumb mixture evenly into the bottom of a 9×13-inch baking dish to create a firm crust layer. Use the back of a spoon or your hands to compact it evenly.
- Add the ice cream layer: Spread the softened vanilla ice cream over the Oreo crust, smoothing it out with a spatula to create an even layer.
- Freeze the cake: Place the dish in the freezer and freeze for at least 4 hours, or until the ice cream layer is completely firm and set.
- Make the ganache: Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chopped chocolate in a heatproof bowl. Let it sit for 2 minutes, then stir until completely smooth and glossy.
- Assemble the cake: Pour the chocolate ganache evenly over the frozen ice cream layer. Top with whipped cream and garnish with chocolate shavings or sprinkles as desired.
- Serve: Slice the cake into 12 squares and serve immediately chilled for the best texture and flavor.
Notes
- Make sure the ice cream is softened to spread easily but not melted.
- You can substitute chocolate ice cream or add crushed Oreos into the ice cream layer for more texture.
- For a firmer crust, chill the Oreo crust in the refrigerator before layering with ice cream.
- Ganache can be made with semi-sweet or dark chocolate depending on your preference.
- Store leftovers covered in the freezer to maintain freshness.
