Instructions
- Prepare the base mixture: In a large bowl, whisk together ¼ cup melted coconut oil, ¼ cup pure maple syrup, ¼ cup coconut sugar, ¼ cup smooth peanut butter, and ¼ tsp salt until you achieve a smooth and well-combined mixture.
- Add dry ingredients: Mix in 1 ½ cup shredded unsweetened coconut and 1 ¼ cup gluten-free old-fashioned oats, stirring by hand until everything is thoroughly combined.
- Line the pan: Line a 9 x 5 inch loaf pan with parchment paper to prevent sticking and for easy removal of the bars.
- Press the base into the pan: Transfer the cookie base mixture into the lined pan and use a spoon to press it down firmly and evenly until condensed.
