Lemon Filling:
- 4 large eggs
- 1 ½ cups granulated sugar
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
- ¼ cup all-purpose flour
- powdered sugar (for dusting)
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Prepare the Cookie Cups: Cream together the softened butter and ½ cup sugar. Add 2 cups of flour and salt, mix until a soft dough forms. Divide the dough into muffin cups, press into the bottom and sides.
- Bake the Cups: Bake for 10–12 minutes until golden.
- Make the Filling: Whisk eggs, 1 ½ cups sugar, lemon juice, zest, and ¼ cup flour. Pour into cookie cups.
- Finish Baking: Bake for 15–18 minutes until set. Cool in the pan, then dust with powdered sugar.
