Lemon Filling:

  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup all-purpose flour
  • powdered sugar (for dusting)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Prepare the Cookie Cups: Cream together the softened butter and ½ cup sugar. Add 2 cups of flour and salt, mix until a soft dough forms. Divide the dough into muffin cups, press into the bottom and sides.
  3. Bake the Cups: Bake for 10–12 minutes until golden.
  4. Make the Filling: Whisk eggs, 1 ½ cups sugar, lemon juice, zest, and ¼ cup flour. Pour into cookie cups.
  5. Finish Baking: Bake for 15–18 minutes until set. Cool in the pan, then dust with powdered sugar.
