Description

Monkey Jam is a delightful tropical-inspired fruit spread made from ripe bananas, pineapple, and shredded coconut. This naturally sweet and vegan-friendly jam features a luscious combination of flavors, perfect for spreading on toast, pancakes, or mixing into yogurt for a vibrant breakfast or snack.

Ingredients

Scale

Fruits

  • 2 ripe bananas, mashed
  • 1 cup chopped pineapple (fresh or canned, drained)

Additional Ingredients

  • 1/2 cup shredded coconut
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granulated sugar

Instructions

  1. Combine ingredients: In a medium saucepan over medium heat, add the mashed bananas, chopped pineapple, shredded coconut, lemon juice, and granulated sugar. Stir the mixture well to combine all the flavors.
  2. Cook the mixture: Keep stirring frequently as the mixture heats up and starts to bubble and thicken. This process takes about 10 to 15 minutes, during which the sugars dissolve and the fruit softens.
  3. Simmer gently: Reduce the heat to low and let the jam simmer for an additional 5 to 10 minutes, stirring occasionally. This will help the jam reach a spreadable consistency with the perfect balance of thickness and moisture.
  4. Finish and cool: Remove the saucepan from heat and stir in the vanilla extract for enhanced flavor. Allow the jam to cool completely before transferring it into a clean jar or an airtight container.
  5. Storage: Store the finished Monkey Jam in the refrigerator where it will keep well for up to 2 weeks. For smoother texture, you can blend the jam after cooking; for rustic texture, leave it chunky.

Notes

  • This tropical-flavored Monkey Jam is delicious on toast, pancakes, or mixed into yogurt.
  • You can blend the jam for a smoother texture or leave it chunky for a rustic feel.
  • For longer storage, preserve the jam using proper canning methods.
