Description

These Delicious Mint Brownies combine rich cocoa flavor with a refreshing peppermint frosting for a perfect dessert treat. With a moist chocolate base and a creamy mint topping, they are ideal for holiday parties or anytime you crave a cool twist on classic brownies.

Ingredients

Scale

Brownie Batter

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp peppermint extract

Mint Frosting

  • 1 cup powdered sugar
  • 2 tbsp butter (softened)
  • 1 tsp peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the melted unsalted butter with granulated sugar until fully blended. Add the eggs one at a time, beating well after each addition to create a smooth mixture.
  3. Combine Dry Ingredients: In another bowl, sift together the unsweetened cocoa powder and all-purpose flour to remove lumps and mix evenly.
  4. Make the Batter: Gradually add the dry cocoa and flour mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the brownies tender.
  5. Bake the Brownies: Pour the batter evenly into the greased baking pan. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs but no raw batter.
  6. Prepare the Frosting: While the brownies cool, beat together powdered sugar, softened butter, peppermint extract, and optional green food coloring until smooth and creamy.
  7. Frost and Serve: Once the brownies have completely cooled, spread the mint frosting evenly over the top. Cut into 12 squares and serve.

Notes

  • Make sure the brownies are fully cooled before frosting to prevent melting.
  • You can adjust the peppermint extract amount to your taste for a stronger or milder mint flavor.
  • Use a toothpick to test doneness; moist crumbs indicate perfectly baked brownies.
  • Optional green food coloring adds festive color but can be omitted for a more natural look.
