Description

Enjoy a taste of the Mediterranean with this flavorful and nutritious steak bowl recipe. Tender marinated steak served on a bed of quinoa or rice, topped with fresh vegetables, feta cheese, and a creamy hummus or tzatziki dressing.

Marinated Steak:

  • 1 pound flank or sirloin steak
  • 2 tablespoons olive oil (divided)
  • juice of 1 lemon
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • salt and black pepper to taste

Other Bowl Ingredients:

  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup cucumber (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup kalamata olives (pitted and sliced)
  • 1/2 avocado (sliced)
  • 1/4 cup hummus or tzatziki for serving
  • fresh parsley for garnish (optional)


Instructions

  1. Marinate the Steak: Combine 1 tablespoon olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate the steak for at least 30 minutes.
  2. Cook the Steak: Heat the remaining olive oil in a skillet or grill pan. Cook the steak for 4–5 minutes per side. Let it rest before slicing thinly.
  3. Assemble the Bowls: Divide quinoa or rice among 4 bowls. Top with steak slices, cherry tomatoes, cucumber, red onion, feta, olives, and avocado. Add hummus or tzatziki and garnish with parsley.
