Description

These Mediterranean Salmon Patties are a flavorful and nutritious twist on traditional salmon cakes. Packed with protein and Omega-3s, these patties are easy to make and perfect for a quick, healthy dinner option.

Salmon Patties:

  • 1 can (14.75 oz) wild-caught salmon, drained and flaked
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh parsley
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes (not in oil)
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/3 cup whole wheat breadcrumbs
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil for cooking


Instructions

  1. Combine Ingredients: In a large bowl, mix salmon, red onion, parsley, feta cheese, sun-dried tomatoes, garlic, eggs, breadcrumbs, lemon zest, lemon juice, oregano, salt, and pepper.
  2. Shape Patties: Divide mixture into 6 portions, shape into patties.
  3. Cook Patties: Heat olive oil in a skillet, cook patties for 3-4 minutes per side until golden brown.
  4. Serve: Remove from heat and serve warm with salad or sauce.

Notes

  • You can substitute canned salmon with fresh cooked salmon.
  • For a gluten-free version, use gluten-free breadcrumbs.
  • Patties can be baked at 400°F (200°C) for 15–18 minutes.
