Salmon Patties:
- 1 can (14.75 oz) wild-caught salmon, drained and flaked
- 1/2 cup finely chopped red onion
- 1/2 cup chopped fresh parsley
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped sun-dried tomatoes (not in oil)
- 2 cloves garlic, minced
- 2 large eggs
- 1/3 cup whole wheat breadcrumbs
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil for cooking
Instructions
- Combine Ingredients: In a large bowl, mix salmon, red onion, parsley, feta cheese, sun-dried tomatoes, garlic, eggs, breadcrumbs, lemon zest, lemon juice, oregano, salt, and pepper.
- Shape Patties: Divide mixture into 6 portions, shape into patties.
- Cook Patties: Heat olive oil in a skillet, cook patties for 3-4 minutes per side until golden brown.
- Serve: Remove from heat and serve warm with salad or sauce.
Notes
- You can substitute canned salmon with fresh cooked salmon.
- For a gluten-free version, use gluten-free breadcrumbs.
- Patties can be baked at 400°F (200°C) for 15–18 minutes.
