Description

These Mediterranean Beef Kabobs are a perfect dish for your next summer grill-out. Tender marinated beef paired with colorful veggies, grilled to perfection, and bursting with Mediterranean flavors.

For the Beef Marinade:

  • 1 1/2 lbs beef sirloin or flank steak (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Kabobs:

  • 1 red bell pepper (cut into chunks)
  • 1 green bell pepper (cut into chunks)
  • 1 red onion (cut into wedges)
  • 1 zucchini (sliced)
  • Fresh parsley and lemon wedges for garnish (optional)


Instructions

  1. Marinate the Beef: In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the beef cubes and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, preferably 1–2 hours for best flavor.
  2. Prepare the Kabobs: Preheat a grill or grill pan to medium-high heat. Thread the marinated beef, bell peppers, onion, and zucchini alternately onto skewers. Grill the kabobs for 8–10 minutes, turning occasionally, until the beef is cooked to your desired doneness and vegetables are slightly charred and tender.
  3. Serve: Remove from the grill and let rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges, pita bread, or tzatziki sauce if desired.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • You can swap in cherry tomatoes, mushrooms, or eggplant for variety.
