Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking during baking.
  2. Cook pasta: Boil rotini pasta in salted water until al dente, about 8-10 minutes. Drain pasta well and set aside.
  3. Cook beef and onion: In a large skillet over medium heat, brown the ground beef with diced onion until fully cooked and no longer pink. Drain excess fat from the skillet.
  4. Season and create sauce: Stir in ranch seasoning, garlic powder, black pepper, and paprika if using. Add the sweet corn, sour cream, cream cheese, and milk. Stir continually until the mixture is smooth, creamy, and well combined.
  5. Melt cheese into sauce: Incorporate 1 1/2 cups of shredded cheddar cheese into the skillet mixture, stirring until melted and evenly distributed.
  6. Combine pasta and sauce: Add the cooked rotini to the skillet and toss thoroughly to coat the pasta evenly in the cheesy beef and corn sauce.
