Description

Refreshing and fragrant Lavender Lemonade Popsicles made with fresh lemon juice, culinary lavender, and a touch of sugar. These easy-to-make frozen treats are perfect for a hot day, combining the floral notes of lavender with the tartness of lemon in a delightful frozen dessert.

For the Lavender Lemonade Syrup

  • 4 cups water
  • 1/4 cup culinary lavender
  • 1/3 cup sugar
  • Juice of 2 large lemons


Instructions

  1. Boil and Steep Lavender: Bring 4 cups of water to a boil in a small pan. Once boiling, add 1/4 cup culinary lavender and steep for 10 minutes using tea filters, a fine sieve, or tea strainer to contain the lavender buds.
  2. Juice the Lemons: While the lavender is steeping, juice 2 large lemons and set the juice aside.
  3. Combine Ingredients: After steeping, remove the lavender from the water. Stir in 1/3 cup sugar and the freshly squeezed lemon juice into the warm lavender water, mixing until the sugar is completely dissolved.
  4. Fill Popsicle Molds: Pour the lavender lemonade mixture into popsicle molds, leaving a little space at the top of each compartment. Place the molds in the freezer for 2-3 hours until partially frozen, then insert popsicle sticks and freeze for at least another 4 hours or overnight until fully solid.
  5. Remove and Store Popsicles: To release the popsicles from the mold, dunk the frozen portion into hot water for about 10 seconds. Remove carefully and store the popsicles in a large Ziploc bag for convenience and to prevent freezer burn.

Notes

  • Using a paper tea filter or fine sieve makes steeping lavender easier and keeps buds out of the popsicle mixture.
  • Wait until the mixture is partially frozen before inserting sticks to prevent them from falling over.
  • Store popsicles in a sealed bag instead of the mold to maintain freshness and prevent freezer odors.
