- 3 cups Cooked white rice
- 2 tablespoons Chopped fresh parsley
- 1 tablespoon Chopped fresh dill or chives
- 0.25 cup Cream or Greek yogurt
Garnish
- 1 cup Cherry tomatoes (halved)
Instructions
- Prepare the creamy herb rice: In a mixing bowl, combine the cooked white rice with chopped parsley and dill or chives. Stir in the cream or Greek yogurt until the rice is evenly coated and creamy. Season with salt and pepper to taste and set aside.
- Cook the shrimp: Pat the shrimp dry with paper towels and season them with salt and pepper. Heat a skillet over medium-high heat and add the olive oil.
