Ingredients
Scale
For the Pasta Chips
- 8 oz (about 1/2 package) of large pasta (like rigatoni, ziti, or penne)
- 1-2 cups vegetable oil, for frying
- Salt, to taste
- 1/2 tsp garlic powder (optional)
Toppings
- 1 cup marinara sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup Parmesan cheese, grated
- 1/4 cup pepperoni slices (or mini pepperoni)
- 1/4 cup black olives, sliced (optional)
Garnish
- Fresh basil leaves, torn
- Crushed red pepper flakes (optional, for heat)
Instructions
- Cook the pasta: Boil the pasta according to package directions until al dente. Drain thoroughly and spread out on a paper towel or clean kitchen towel to cool completely and remove excess moisture.
- Fry the pasta: Heat vegetable oil in a deep skillet or large pot over medium heat to about 350°F (175°C). Fry pasta in small batches until golden brown and crispy, approximately 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Season immediately with salt and optional garlic powder.
- Preheat the oven: Set your oven to 375°F (190°C) in preparation for baking the nachos.
- Assemble the nachos: On a baking sheet, evenly spread the fried pasta chips. Spoon marinara sauce over the chips, then sprinkle with shredded mozzarella and grated Parmesan cheese. Add pepperoni slices and optional black olives on top.
- Bake the nachos: Place the baking sheet in the oven and bake for 8-10 minutes until the cheese is melted and bubbly. Optional: Broil for 1-2 minutes to achieve a golden, slightly crispy cheese topping.
- Garnish and serve: Remove from oven and garnish with torn fresh basil leaves and a sprinkle of crushed red pepper flakes if desired. Serve immediately with extra marinara sauce for dipping.
Notes
- Ensure pasta is completely dry before frying to prevent oil splatter.
- You can substitute pepperoni with other cured meats or omit for a vegetarian option.
- Adjust the amount of crushed red pepper flakes to control the heat level.
- Store leftover pasta chips separately from toppings to maintain crispiness.
- Homemade marinara sauce can enhance flavor but store-bought is convenient.
