These irresistibly delicious Shrimp and Crab Nacho Biscuit Melts combine tender seafood, creamy cheeses, and bold spices stuffed inside golden, flaky biscuit dough. Perfect as an appetizer or snack, they bake to crispy perfection and are sure to become your new favorite indulgence.

Ingredients

Scale

Biscuit Dough

  • 1 can (8 count) refrigerated biscuit dough
  • 1 tablespoon butter
  • 2 cloves garlic, minced

Seafood Mixture

  • 1/2 cup small cooked shrimp, chopped
  • 1/2 cup lump crab meat (fresh or canned, drained)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup diced tomatoes (optional)
  • 2 tablespoons diced jalapeños (optional for heat)
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish

  • 1 tablespoon chopped green onions (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté garlic and seafood: Melt butter in a skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Stir in chopped shrimp and lump crab meat and cook for 2 minutes to combine flavors, then remove from heat.
  3. Mix the filling: In a mixing bowl, combine the cooked shrimp and crab mixture with softened cream cheese, shredded cheddar cheese, sour cream, diced tomatoes, diced jalapeños, Old Bay seasoning, salt, and black pepper. Mix until everything is thoroughly incorporated.
  4. Prepare biscuit dough: Separate the biscuit dough into individual biscuits and flatten each into a 4-inch round using your hands or a rolling pin.
  5. Assemble melts: Spoon about 1–2 tablespoons of the seafood mixture onto the center of half the biscuit rounds. Top each with another biscuit round and pinch the edges firmly to seal the filling inside, forming stuffed biscuit melts. Press gently to slightly flatten them.
  6. Bake: Arrange the stuffed biscuit melts on the prepared baking sheet and bake for 13–15 minutes until the biscuits turn golden brown and cooked through.
  7. Serve: Allow the melts to cool slightly after baking. Garnish with chopped green onions and serve warm. Optional accompaniments include extra sour cream or salsa for dipping.

Notes

  • For best texture, ensure seafood is well drained before mixing to prevent soggy biscuits.
  • Customize heat by adjusting the amount of jalapeños or omit entirely for a milder version.
  • Use fresh crab meat if possible for the freshest flavor, canned crab meat works well too.
  • If biscuits brown too quickly, reduce oven temperature slightly or tent with foil.
  • Serve immediately for best flavor and texture; these melts are best enjoyed fresh out of the oven.
