Instructions
- Brown the Sausage: Turn the Instant Pot onto sauté mode and spray with olive oil. Place the sliced Andouille sausage in the pot and cook until browned on each side. Once done, transfer the sausage to a plate lined with paper towels to absorb excess grease.
- Sauté Vegetables: Add diced onion, bell pepper, celery, and minced garlic to the pot. Sauté until the vegetables are soft and fragrant, about 3-5 minutes.
- Add Seasonings and Liquids: Stir in Cajun seasoning, thyme, diced tomatoes with their juices, and low sodium chicken stock. Mix well to combine all the ingredients.
- Cook the Rice: Add the long grain rice to the Instant Pot and stir once more to evenly distribute. Close and seal the lid, set the pot to cook at high pressure for 8 minutes, then perform a quick pressure release.
- Incorporate Sausage and Shrimp: After releasing pressure, open the lid and add the browned sausage and raw shrimp to the pot. Gently stir to incorporate them into the rice mixture.
- Cook Shrimp with Residual Heat: Turn off the Instant Pot and close the lid without sealing it to allow the shrimp to cook in the residual heat for 8-10 minutes. This ensures the shrimp remain tender and perfectly cooked.
- Garnish and Serve: Garnish the jambalaya with sliced scallions before serving. Enjoy your flavorful and comforting meal!
