Instructions
- Strain Pan Drippings: Strain the pan drippings through a fine-mesh sieve to remove any solids. Discard the solids and reserve 2 1/2 cups of the clear drippings, setting them aside for later use.
- Make the Roux: In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and the chopped fresh thyme. Cook this mixture, whisking constantly until it becomes lightly browned, about 1 minute, to form a flavorful roux.
- Add Pan Drippings: Gradually whisk in the reserved pan drippings to the roux. Bring the mixture to a boil, then reduce the heat to low. Simmer the gravy, whisking constantly, until it thickens to a smooth consistency, approximately 5 to 10 minutes.
- Finish and Season: Stir in the chopped fresh parsley, then season the gravy with kosher salt and freshly ground black pepper to taste. Mix well to combine all flavors.
