Ingredients
Scale
Main Ingredients
- 1 lb lean ground beef
- 1 packet taco seasoning
- 6 medium flour tortillas
- 1 can refried beans (16 oz)
- 1 can enchilada sauce (10 oz)
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
Fresh Toppings
- Diced Roma tomato
- Sliced green onion
- Sliced black olives
Instructions
- Preheat and prepare baking sheets: Preheat your oven to 375°F (190°C). Lightly spray two baking sheets with cooking spray to prevent sticking and ensure easy cleanup.
- Crisp the tortillas: Arrange three tortillas on each baking sheet. Bake for 3-5 minutes until the bottoms are golden brown, then flip each tortilla and bake for another 2-5 minutes until they become crispy and slightly toasted.
- Cook the ground beef: In a large skillet over medium-high heat, add the ground beef. Cook, stirring occasionally, until browned and cooked through. Drain any excess grease to keep the dish from becoming oily.
- Add seasoning to beef: Sprinkle the taco seasoning packet over the cooked beef. Add the recommended amount of water according to the seasoning packet instructions (usually about 2/3 cup) and simmer the mixture for roughly 10 minutes until the sauce thickens and flavors meld.
- Warm the refried beans: Transfer the refried beans to a microwave-safe bowl and heat for 1-2 minutes until warmed through, stirring halfway to ensure even heating.
- Layer the pizza bases: Take one crispy tortilla and spread a generous layer of warm refried beans on top. Add the seasoned beef mixture evenly over the beans, then place another tortilla on top to form a double layer.
- Add sauce and cheese: Spread the enchilada sauce evenly over the top tortilla. Then sprinkle both cheddar and pepper-jack cheeses generously across the enchilada sauce layer. Finally, scatter your desired fresh toppings such as diced Roma tomatoes, green onions, and sliced black olives.
- Repeat and bake: Assemble the remaining tortillas the same way on the second baking sheet. Place both baking sheets back in the oven and bake for about 5 minutes more, or until the cheese is melted, bubbly, and slightly golden.
Notes
- You can customize your toppings by adding jalapeños, avocado slices, or sour cream for extra flavor.
- Use lean ground turkey as a lighter alternative to ground beef.
- For a crispier crust, bake tortillas slightly longer before adding toppings.
- If you prefer, use corn tortillas but note they may be more delicate to handle.
- To make this dish vegetarian, substitute the beef with sautéed mushrooms or a meatless crumbles alternative.
