Description

This classic Furikake recipe is a savory Japanese seasoning blend made with toasted sesame seeds, nori seaweed, bonito flakes, salt, and a touch of sugar. It’s perfect for sprinkling over rice, vegetables, or seafood to add a burst of umami flavor.

Ingredients

Scale

Furikake Seasoning

  • 2 tablespoons white sesame seeds
  • 1 tablespoon black sesame seeds
  • 2 sheets of nori seaweed
  • 2 tablespoons bonito flakes (Katsuobushi)
  • 1 teaspoon sea salt
  • 1/2 teaspoon sugar

Instructions

  1. Toast the sesame seeds: Heat the white and black sesame seeds in a small skillet over medium heat for about 1 minute, or until fragrant and lightly toasted. Remove from heat and transfer to a small mixing bowl.
  2. Prepare the nori: Carefully wave each sheet of nori over a medium gas flame for about 30 seconds until it becomes crisp and toasted, or alternatively toast it in the same skillet over medium heat. Once toasted, crumble the nori into small flakes directly into the bowl with the sesame seeds.
  3. Mix the seasoning: Add the bonito flakes, sea salt, and sugar into the bowl with the sesame seeds and nori flakes. Stir thoroughly to combine all ingredients evenly.
  4. Store the furikake: Transfer the mixture to an airtight container and store it in a cool, dry place. Use within 1 month for optimal freshness and flavor.

Notes

  • Use fresh bonito flakes for the best umami flavor.
  • Adjust salt and sugar quantities to taste.
  • Furikake can be sprinkled on rice, salads, grilled fish, or popcorn for added flavor.
  • Ensure the nori is evenly toasted to avoid bitterness.
  • Store in an airtight container to maintain crispness and flavor.
