  • ½ tsp. fresh thyme, finely chopped
  • ½ tsp. salt, or to taste

Instructions

  1. Season the Carrots: Preheat your oven to 400°F (204°C). In a medium bowl, whisk together the oil, honey, finely chopped rosemary, thyme, and salt until fully combined. Place the peeled and cut carrots in a large bowl, then pour the honey-herb sauce over them. Toss well to ensure all carrot pieces are evenly coated with the mixture.
  2. Roast in the Oven: Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. Spread the coated carrots out in a single even layer on the sheet, avoiding overcrowding to promote even roasting. Place the baking sheet in the preheated oven and roast the carrots for 24 to 28 minutes until they are tender and caramelized around the edges.
