- 2 racks of lamb (about 1½ pounds each)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 2 teaspoons Dijon mustard
- ¾ cup fresh breadcrumbs
- ¼ cup grated Parmesan cheese
- ¼ cup olive oil
- Salt and freshly ground black pepper to taste
Instructions
- Preheat the oven: Preheat the oven to 450°F (230°C).
- Season the lamb: Season the lamb racks generously with salt and pepper.
- Prepare herb mixture: In a small bowl, combine garlic, rosemary, thyme, and olive oil to make a paste. Rub this mixture all over the lamb.
- Make breadcrumb crust: Mix breadcrumbs and Parmesan cheese. Brush lamb racks with Dijon mustard, then press breadcrumb mixture onto the surface.
- Roast the lamb: Place racks on a roasting pan bone-side down. Roast for 20-25 minutes for medium-rare.
- Rest and serve: Remove from oven, tent with foil, let rest for 10 minutes. Slice into chops and serve.
Notes
- For enhanced flavor, marinate lamb in the herb mixture for up to 4 hours beforehand.
- If using pre-seasoned breadcrumbs, reduce the added salt.
