Description

This savory Hash Brown Frittata is a hearty and delicious breakfast or brunch dish featuring crispy hash browns, sautéed bell peppers and onions, and melted cheddar cheese all baked together in a skillet. It’s easy to prepare, wholesome, and perfect for serving a crowd or meal prepping for the week.

Ingredients

Scale

Main Ingredients

  • 2 cups frozen hash browns
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced bell peppers (mixed colors)
  • 1 small onion, diced
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat and Prepare Skillet: Preheat your oven to 400°F (200°C) and generously spray a large oven-safe skillet with nonstick cooking spray to prevent sticking during baking.
  2. Sauté Veggies: Place the skillet on the stovetop over medium heat and sauté the diced onions and bell peppers until they become soft and fragrant, about 5 minutes, stirring occasionally to ensure even cooking.
  3. Mix Eggs and Ingredients: In a large mixing bowl, whisk together the 6 eggs, salt, and pepper until fully blended. Stir in half of the shredded cheese and all of the frozen hash browns until well combined.
  4. Combine Mixture: Pour the egg and hash brown mixture over the sautéed vegetables in the skillet, spreading it evenly to create a uniform layer.
  5. Add Cheese and Bake: Sprinkle the remaining shredded cheese evenly over the top of the frittata. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the frittata is fully set and golden on top.
  6. Cool and Serve: Remove from the oven and allow the frittata to cool slightly to set further before slicing into portions. Serve warm for best flavor and texture.

Notes

  • Use an oven-safe skillet (such as cast iron or stainless steel) to cook and bake the frittata in the same pan.
  • Feel free to customize with different cheeses or add cooked meats like sausage or ham for extra protein.
  • Allow the frittata to cool briefly after baking to ensure clean slices.
  • Leftovers can be refrigerated for 2-3 days and reheated in the oven or microwave.
  • For a gluten-free option, verify that your frozen hash browns do not contain any wheat-based additives.
