Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Sauté Vegetables and Meat: In a large skillet, heat olive oil or butter over medium heat. Add the finely chopped onion and diced red bell pepper and sauté for 4 to 5 minutes until soft and fragrant. If using cooked breakfast sausage or bacon, stir it into the skillet and cook briefly until heated through.
  3. Mix Egg Base: In a large mixing bowl, whisk together the 8 large eggs, 1 cup milk, garlic powder, salt, and black pepper until fully combined and slightly frothy.
  4. Combine Ingredients: Add the thawed hash browns, sautéed vegetables, cooked meat (if using), and 1 cup of shredded cheddar cheese into the egg mixture. Stir gently until all ingredients are evenly incorporated.
  5. Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining ½ cup of shredded cheddar cheese on top for a cheesy crust.
