Description

This hearty Guinness Beef Stew is a comforting and flavorful dish perfect for chilly days. Tender beef, vegetables, and the rich flavor of Guinness stout come together in a delicious stew that is sure to warm you up.

For the Beef:

  • 2 pounds beef chuck, cut into 1 1/2-inch cubes
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Stew:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 (11.2-ounce) bottle Guinness stout
  • 2 cups beef broth
  • 4 carrots, peeled and chopped
  • 3 medium potatoes, peeled and chopped
  • 2 celery stalks, chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley (optional, for garnish)


Instructions

  1. Coat the Beef: In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
  2. Sear the Beef: Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, about 5–7 minutes total. Transfer the browned beef to a plate.
  3. Sauté Onions: In the same pot, sauté the chopped onion for 3–4 minutes until softened. Add the garlic and tomato paste and cook for another minute.
  4. Add Guinness: Pour in the Guinness and scrape up any browned bits from the bottom.
  5. Cook the Stew: Return the beef to the pot and add beef broth, carrots, potatoes, celery, Worcestershire sauce, thyme, and bay leaf. Simmer for 2 to 2 1/2 hours until beef is tender and vegetables are soft.
  6. Finish and Serve: Remove the bay leaf. Garnish with parsley before serving.
