Packed with fresh flavors and easy to prepare, it’s perfect for serving over rice, quinoa, or noodles for a nutritious dinner that the whole family will love.

Ingredients

Scale

Protein

  • 1 pound ground turkey – lean protein option

Vegetables

  • 1 onion – chopped
  • 3 cloves garlic – minced
  • 1 bell pepper – sliced
  • 1 cup broccoli florets – fresh or frozen
  • 1 cup carrots – thinly sliced
  • 1 cup snap peas – for crunch
  • 2 green onions – chopped for garnish

Sauce and Seasoning

  • â…“ cup teriyaki sauce – store-bought or homemade
  • 2 tablespoons soy sauce – for extra flavor
  • 1 tablespoon ginger – grated
  • 1 tablespoon cornstarch – for thickening the sauce
  • Salt and pepper – to taste
  • Sesame seeds – for garnish

Cooking Oil

  • 1 tablespoon olive oil – for cooking

Instructions

  1. Cook the turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey, season with salt and pepper, and cook until browned, breaking it up as it cooks. Remove the turkey from the skillet and set aside to keep warm.
  2. Sauté the vegetables: In the same skillet, add a bit more olive oil if needed. Add the chopped onion, minced garlic, sliced bell pepper, broccoli florets, thinly sliced carrots, and snap peas. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
  3. Prepare the sauce: In a small bowl, whisk together the teriyaki sauce, soy sauce, grated ginger, and cornstarch until the mixture is smooth and well combined.
  4. Combine: Return the cooked ground turkey to the skillet with the vegetables. Pour the prepared sauce over the mixture, stirring well to coat all ingredients evenly. Simmer for 2-3 minutes, stirring frequently, until the sauce thickens and glazes the stir-fry.
  5. Serve: Garnish with chopped green onions and sesame seeds. Serve the stir fry hot over your choice of steamed rice, quinoa, or noodles for a complete meal.

Notes

  • You can substitute ground chicken or lean beef if preferred.
  • For a gluten-free option, use tamari or gluten-free soy sauce and check that the teriyaki sauce is gluten-free.
  • Feel free to add other vegetables such as mushrooms or zucchini based on seasonal availability.
  • If you prefer a spicier dish, add a pinch of crushed red pepper or drizzle of sriracha when combining the sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
