  • 1/4 cup low-sodium chicken broth or water

Instructions

  1. Heat the olive oil: Warm 1 tablespoon of olive oil in a large skillet over medium heat to prepare for cooking the sweet potatoes and turkey.
  2. Cook the sweet potatoes: Add the diced sweet potatoes to the skillet and cook, stirring occasionally, for 5-7 minutes until they start to soften.
  3. Brown the ground turkey: Add the ground turkey to the skillet with the sweet potatoes, breaking it apart with a spoon as it cooks until no longer pink and nicely browned.
  4. Sauté the veggies: Stir in the diced onion, minced garlic, and chopped red bell pepper; cook for another 3-4 minutes until the vegetables begin to soften.
  5. Add zucchini and spices: Mix in the diced zucchini, smoked paprika, ground cumin, dried oregano, salt, black pepper, and optional crushed red pepper flakes. Stir thoroughly to coat all ingredients evenly.
  6. Simmer with broth: Pour in 1/4 cup low-sodium chicken broth or water, cover the skillet, and reduce heat to low. Let it simmer for 5-7 minutes until the sweet potatoes are completely tender.
  7. Evaporate excess liquid: Remove the skillet lid and cook uncovered for an additional 2 minutes to allow any extra liquid to evaporate and thicken the mixture.
