For the Marinade:
- 2 tablespoons peach preserves or jam
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon chili garlic sauce or sriracha
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
For the Chicken:
- 4 boneless skinless chicken breasts
- 2 ripe peaches, pitted and sliced
- 2 tablespoons olive oil
- Fresh thyme or basil for garnish (optional)
Instructions
- Prepare the Marinade: In a small bowl, combine peach preserves, apple cider vinegar, soy sauce, honey, chili garlic sauce, garlic, smoked paprika, salt, and pepper. Set aside 2 tablespoons for later.
- Marinate the Chicken: Place chicken in a dish, pour the marinade over, and marinate for 30 minutes to 4 hours.
- Grill: Preheat grill. Brush peach slices with olive oil. Grill chicken for 5–6 minutes per side, brushing with reserved marinade in the final 2 minutes. Grill peaches for about 2 minutes per side.
- Serve: Top chicken with grilled peaches and herbs.
Notes
- This dish pairs well with rice, quinoa, or a fresh salad.
- Nectarines can be used as a peach substitute.
