Ingredients
Scale
Chicken
- 2 pounds bone-in chicken thighs (about 5-6 thighs)
Marinade
- 5.3-ounce container Greek yogurt
- 2 tablespoons lemon juice (or half for a milder flavor) + extra lemon wedges for garnish
- 1/4 cup olive oil
- 1 tablespoon chopped fresh parsley + extra for garnish
- 1 1/2 teaspoons chopped fresh thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the marinade and chicken: In a large bowl made of glass or plastic, whisk together the Greek yogurt, lemon juice, olive oil, chopped fresh parsley, thyme, garlic powder, salt, and black pepper until well combined. Add the bone-in chicken thighs to the bowl and toss them thoroughly in the marinade ensuring every piece is well-coated. Cover and marinate for a minimum of 15 minutes, but for best flavor and tenderness, let it marinate up to 24 hours.
- Preheat and cook the chicken: Preheat your oven to 425°F (220°C) if baking, or prepare your grill to medium-high heat if grilling. Lightly grease a baking dish if using the oven, or grease the grill grates. Place the marinated chicken thighs in the dish or directly on the grill. Bake in the oven for 40 to 50 minutes, or grill for about 4 to 5 minutes on each side. The chicken is done when it reaches an internal temperature of 162°F (72°C) and is golden brown on the outside.
- Rest and serve: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. This resting period allows the internal temperature to rise to the safe level of 165°F (74°C) while keeping the juices locked in. Garnish the chicken with additional fresh parsley and lemon wedges for a bright finish. Serve immediately and enjoy your flavorful Greek Yogurt Chicken.
Notes
- For a milder lemon flavor, use half of the lemon juice specified and adjust according to taste.
- Marinating the chicken overnight enhances tenderness and flavor but a minimum of 15 minutes is sufficient if short on time.
- Bone-in chicken thighs yield juicier results compared to boneless cuts.
- Use a meat thermometer to ensure safe and optimal cooking temperature.
- Chicken can be cooked either in the oven or on the grill based on your preference or season.
